This sweet and sour chicken recipe delivers bold, vibrant flavor in just 30 minutes. Juicy chicken, tangy sauce, and colorful vegetables create a better-than-takeout meal at home.
Ingredients
1 lb chicken thighs, cut into pieces
1 cup pineapple chunks
1 red bell pepper, chopped
1 green bell pepper, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 tbsp grated ginger
1/2 cup ketchup
1/4 cup rice vinegar
1/4 cup soy sauce
2 tbsp brown sugar
2 tbsp olive oil
Salt and pepper to taste
1 tsp sesame seeds
Instructions
1. Cut chicken into bite-sized pieces and season with salt and pepper
2. Cook rice according to package instructions
3. Heat oil in skillet and sear chicken until golden, about 5–7 minutes
4. Remove chicken and sauté onion, peppers, garlic, and ginger
5. Add ketchup, vinegar, soy sauce, and sugar, then simmer until thickened
6. Return chicken and add pineapple, cook 3–5 minutes
7. Serve over rice and garnish with sesame seeds
Notes
Use fresh pineapple for best flavor
Adjust sweetness by adding more or less sugar
Store leftovers in fridge up to 4 days
