Description

Viral High-Protein McGriddle Breakfast Bites combine fluffy protein pancakes, savory breakfast sausage, scrambled eggs, and melted cheddar cheese in mini bite-size sandwiches. These sweet and savory breakfast bites are meal-prep friendly, freezer-ready, and perfect for busy mornings.


Ingredients

  • 1 1/2 cups protein pancake mix
  • 6 large eggs
  • 1/2 cup milk
  • 8 ounces breakfast sausage
  • 1 cup shredded cheddar cheese
  • 2 tablespoons maple syrup
  • 2 tablespoons melted butter
  • 1 teaspoon baking powder optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Cooking spray or oil for greasing
  • 1 tablespoon butter optional glaze
  • 1 tablespoon maple syrup optional glaze
  • 2 tablespoons sliced green onions optional
  • Hot sauce optional

Instructions

  1. Preheat oven to 375°F and lightly grease a muffin tin or baking dish with cooking spray.
  2. Cook breakfast sausage in a skillet over medium heat breaking it apart until browned and fully cooked about 6 to 8 minutes then drain excess grease.
  3. In a bowl whisk eggs with salt black pepper garlic powder and onion powder until smooth.
  4. Lightly scramble the eggs in a skillet over medium low heat until just barely set then remove from heat.
  5. In a separate bowl whisk protein pancake mix milk melted butter maple syrup and baking powder until smooth.
  6. Add one tablespoon of pancake batter to the bottom of each muffin cup.
  7. Spoon scrambled eggs over the pancake batter layer.
  8. Add cooked sausage crumbles on top of the eggs.
  9. Sprinkle shredded cheddar cheese over the sausage layer.
  10. Top with another spoonful of pancake batter filling each cup about three quarters full.
  11. Bake for 15 to 18 minutes until golden brown and set.
  12. Allow the bites to rest for about 5 minutes before removing from the pan.
  13. Optional mix melted butter with maple syrup and brush lightly over the warm bites before serving.

Notes

  • These breakfast bites are excellent for meal prep and store well in the refrigerator for up to 4 days.
  • Freeze cooled bites in an airtight container for up to 2 months.
  • Reheat in the microwave for 30 to 45 seconds or in the oven at 350°F for about 8 minutes.
  • You can swap pork sausage for turkey or chicken sausage for a leaner version.
  • Add spinach diced peppers or mushrooms for extra vegetables.
