- 1 1/2 cups protein pancake mix
- 6 large eggs
- 1/2 cup milk
- 8 ounces breakfast sausage
- 1 cup shredded cheddar cheese
- 2 tablespoons maple syrup
- 2 tablespoons melted butter
- 1 teaspoon baking powder optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Cooking spray or oil for greasing
- 1 tablespoon butter optional glaze
- 1 tablespoon maple syrup optional glaze
- 2 tablespoons sliced green onions optional
- Hot sauce optional
Instructions
- Preheat oven to 375°F and lightly grease a muffin tin or baking dish with cooking spray.
- Cook breakfast sausage in a skillet over medium heat breaking it apart until browned and fully cooked about 6 to 8 minutes then drain excess grease.
- In a bowl whisk eggs with salt black pepper garlic powder and onion powder until smooth.
- Lightly scramble the eggs in a skillet over medium low heat until just barely set then remove from heat.
- In a separate bowl whisk protein pancake mix milk melted butter maple syrup and baking powder until smooth.
- Add one tablespoon of pancake batter to the bottom of each muffin cup.
- Spoon scrambled eggs over the pancake batter layer.
- Add cooked sausage crumbles on top of the eggs.
- Sprinkle shredded cheddar cheese over the sausage layer.
- Top with another spoonful of pancake batter filling each cup about three quarters full.
- Bake for 15 to 18 minutes until golden brown and set.
- Allow the bites to rest for about 5 minutes before removing from the pan.
- Optional mix melted butter with maple syrup and brush lightly over the warm bites before serving.
Notes
- These breakfast bites are excellent for meal prep and store well in the refrigerator for up to 4 days.
- Freeze cooled bites in an airtight container for up to 2 months.
