Description

  • 1 1/2 pounds ground beef (80/20 blend)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 68 slices American cheese
  • 1 1/2 cups shredded iceberg lettuce
  • 2 Roma tomatoes, diced
  • 1/2 cup dill pickles, sliced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon relish
  • 1 tablespoon butter or neutral oil
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. In a small bowl, whisk mayonnaise, ketchup, mustard, and relish to make the burger sauce. Refrigerate.
  2. Divide ground beef into 6-8 loose balls (about 3 ounces each).
  3. Preheat a cast-iron skillet over medium-high heat and lightly grease with butter or oil.
  4. Place a tortilla on a flat surface and press one beef ball thinly across the tortilla.
  5. Season the beef side with salt, pepper, garlic powder, and onion powder.
  6. Place tortilla beef-side down in the hot skillet and press firmly with a spatula. Cook 2-3 minutes until crispy and browned.
  7. Flip so tortilla side is down and top beef with a slice of American cheese.
  8. Cook 1-2 more minutes until tortilla is golden and cheese melts.
  9. Remove from skillet and rest 1-2 minutes.
  10. Top with burger sauce, lettuce, tomatoes, pickles, and red onion.
  11. Fold and serve immediately while hot and crispy.
