  • 2 large chicken breasts (about 1 pound), diced or sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1 cup cucumber, grated and squeezed dry
  • 2 tablespoons fresh dill, chopped
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber slices
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • Extra lemon wedges for serving

Instructions

1. In a bowl combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create the marinade.

2. Add the chicken pieces and toss well to coat evenly. Let the chicken marinate for 15–20 minutes.

3. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, salt, and pepper in a bowl.

4. Refrigerate the tzatziki sauce for about 10–15 minutes so the flavors blend together.

5. Cook rice according to package instructions if not already prepared. Fluff with a fork.

6. Heat a large skillet over medium-high heat and add the marinated chicken in a single layer.

7. Cook the chicken for about 4–5 minutes per side until golden and fully cooked through.

8. Remove the chicken from heat and let it rest for 2 minutes.

9. Prepare the vegetables by slicing cucumber, halving cherry tomatoes, and thinly slicing red onion.

10. To assemble bowls, start with a scoop of warm rice in each bowl.

11. Add the cooked chicken over the rice.

12. Arrange cucumber, tomatoes, and red onion around the bowl.

13. Sprinkle crumbled feta cheese over the top.

14. Finish with a generous spoonful of tzatziki sauce and garnish with chopped parsley and a squeeze of lemon.

Notes

  • For extra Mediterranean flavor add kalamata olives or roasted chickpeas.
  • Brown rice or quinoa can be used instead of white rice.
