Description

Baked Ravioli with Spinach & Ricotta is a healthy comfort food layered with creamy cheese, fresh spinach, and rich tomato sauce.


Ingredients

Scale

2 cups fresh spinach

1 cup ricotta cheese

1/2 cup grated Parmesan

1 egg

1 package ravioli

1 can diced tomatoes (14 oz)

1 cup shredded mozzarella

2 tbsp olive oil

1 clove garlic, minced

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Pinch of nutmeg


Instructions

1. Wash and sauté spinach with olive oil and garlic until wilted

2. Mix spinach with ricotta, Parmesan, egg, nutmeg, salt, and pepper

3. Simmer diced tomatoes with herbs and seasoning for 10 minutes

4. Spread sauce in baking dish and layer ravioli

5. Add ricotta-spinach mixture and repeat layers

6. Top with mozzarella cheese

7. Bake at 375°F for 25–30 minutes until golden and bubbly

8. Let rest before serving

Notes

Use fresh or frozen ravioli

Add mushrooms or zucchini for variation

Store leftovers in fridge up to 4 days

Freeze portions for up to 3 months
