Hi there, food lover! 👋 Ready to treat yourself to a slice of rich, decadent joy? Let’s dive into a dessert that brings together the fudgy goodness of brownies and the sweet, tropical charm of cherries and coconut.

Ingredients:

For the Brownie Base:

  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) sugar
  • 1/2 cup (100g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup (40g) cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp salt

For the Cherry Coconut Topping:

  • 1 1/2 cups desiccated coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 1 cup glace cherries, halved

For the Chocolate Ganache:

  • 1/2 cup (120ml) heavy cream
  • 100g dark chocolate, chopped

Directions:

  1. Preheat the oven to 175°C (350°F). Line a square baking tin with parchment paper.
  2. In a mixing bowl, whisk together melted butter, sugar, brown sugar, eggs, and vanilla until smooth and glossy.
  3. Sift in cocoa powder, flour, and salt. Stir gently until just combined.
  4. Pour the brownie batter into the prepared tin and smooth the top. Bake for 20–25 minutes, or until just set.
  5. While the brownie base bakes, mix the coconut, sweetened condensed milk, vanilla, and cherries in a bowl.
  6. Once the brownie layer is out of the oven, let it cool slightly, then gently spread the cherry coconut mixture over the top.
  7. Return to the oven for an additional 10 minutes.
  8. For the ganache, heat the cream until just steaming, then pour over chopped chocolate. Let sit for 1 minute, then stir until silky smooth.
  9. Pour ganache over the cooled cherry layer and spread evenly. Chill for at least 1 hour before slicing.
