Description

This crockpot sweet and sour chicken is a vibrant, comforting dish made with tender chicken, pineapple, and a rich tangy sauce. It’s easy, flavorful, and perfect for busy weeknights or family dinners.


Ingredients

2 lbs boneless skinless chicken breasts (cut into chunks)

2 tbsp cornstarch

1 tbsp soy sauce

1/2 tsp salt

1/4 tsp black pepper

1 tbsp vegetable oil

1 cup pineapple juice

1/2 cup brown sugar

1/2 cup rice vinegar

1/3 cup ketchup

3 tbsp soy sauce

1 tsp minced garlic

1/2 tsp grated ginger (optional)

1 red bell pepper (chopped)

1 green bell pepper (chopped)

1 small onion (chopped)

1 cup pineapple chunks

1 tbsp cornstarch + 2 tbsp water (optional)

Cooked rice or noodles (for serving)

Green onions and sesame seeds (for garnish)


Instructions

1. Coat chicken with cornstarch, soy sauce, salt, and pepper.

2. Brown chicken lightly in a skillet with oil.

3. Mix pineapple juice, brown sugar, vinegar, ketchup, soy sauce, garlic, and ginger.

4. Place chicken in crockpot and pour sauce over it.

5. Add bell peppers, onion, and pineapple chunks.

6. Cook on low for 4-5 hours or high for 2-3 hours.

7. Mix cornstarch slurry and add 15 minutes before serving if needed.

8. Serve over rice or noodles and garnish.

Notes

Browning chicken adds extra flavor.

Adjust sugar for a lighter taste.

Add chili flakes for heat.

Store leftovers in fridge for up to 4 days.

Freeze up to 2 months.
