Ingredients
2 medium eggplants, cubed
3 tbsp olive oil
3 cloves garlic, minced
1 onion, chopped
2 tomatoes, diced
1/2 tsp salt
1/2 tsp black pepper
1 tsp oregano
1/2 tsp red pepper flakes
2 tbsp parsley
Optional: tomato paste, parmesan cheese, lemon juice
Instructions
1. Cube and salt eggplant, rest 15 minutes, rinse and dry
2. Heat olive oil and sauté onion and garlic
3. Add eggplant and cook until soft and golden
4. Add tomatoes and seasoning, simmer 10–12 minutes
5. Garnish with herbs and serve warm
