Ingredients:
For the roast:
- 3–4 lb chuck roast
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp olive oil
- 2 tbsp all-purpose flour
For the onion base:
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp soy sauce (optional, for umami depth)
- 2 cups beef broth (low sodium)
- 1 tsp dried thyme
- 1 bay leaf
Optional add-ins:
- 3 carrots, chopped
- 2 potatoes, quartered

Directions:
- Pat the roast dry and season with salt, pepper, garlic powder, and onion powder. Lightly dust with flour on all sides.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear the roast on all sides until nicely browned (about 3-4 minutes per side). Transfer to the slow cooker.
- In the same skillet, add 2 tbsp olive oil and cook the sliced onions over medium heat for 10-15 minutes, stirring often, until golden and caramelized. Add minced garlic in the last 2 minutes.
- Pour in the beef broth and soy sauce, if using. Scrape up the browned bits from the bottom of the pan and stir in the thyme.
- Pour the onion mixture over the roast in the slow cooker. Add the bay leaf, and your carrots and potatoes if desired.
- Cover and cook on LOW for 8 hours or until the meat is fall-apart tender.
