Instant Pot Korean Beef and Rice

Ingredients:

For the beef:

  • 1 ½ lbs (680g) ground beef or thinly sliced flank steak
  • 1 tablespoon sesame oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • ½ teaspoon crushed red pepper flakes (optional, for heat)
  • 1 tablespoon rice vinegar (alcohol-free version)

For the rice:

  • 2 cups jasmine or short-grain white rice
  • 2 ½ cups water
  • ½ teaspoon salt

Garnishes (optional but tasty!):

  • Chopped green onions
  • Sesame seeds
  • Julienned carrots or cucumber for freshness

Directions:

  1. Sauté the aromatics:
    Set your Instant Pot to “Sauté” mode. Add sesame oil, then sauté the onion until soft (about 3 minutes). Stir in garlic and ginger for another 30 seconds until fragrant.
  2. Cook the beef:
    Add ground beef (or sliced steak) and brown it until no longer pink. Drain excess fat if needed.
  3. Add seasoning:
    Stir in soy sauce, brown sugar, vinegar, and red pepper flakes. Let everything simmer for 2 minutes. Turn off “Sauté” mode.
  4. Add rice and water:
    In a separate Instant Pot liner (or after removing the beef mixture temporarily), combine rice, water, and salt. Place a trivet over the rice and carefully place a heatproof bowl with the cooked beef mixture on top.
  5. Pressure cook:
    Seal the Instant Pot lid. Cook on high pressure for 10 minutes. Let it naturally release pressure for 10 more minutes before quick releasing any remaining steam.
  6. Finish it off:
    Remove the beef mixture and stir in the cornstarch slurry. Turn on “Sauté” again for 2–3 minutes until the sauce thickens.
  7. Serve:
    Fluff the rice and spoon the saucy beef over it. Garnish with green onions, sesame seeds, and fresh veggies if desired.
