- 1 lb turkey or beef kielbasa (halal, sliced into rounds)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 ½ cups chicken broth (low sodium)
- 1 can (14.5 oz) diced tomatoes (with juice)
- ¾ cup heavy cream
- 8 oz penne or rotini pasta (uncooked)
- 1 ½ cups shredded mozzarella cheese
- 1 tsp paprika
- Salt & pepper to taste
- Fresh parsley for garnish (optional) 🌿

Directions:
- In a large deep skillet or pot, heat the olive oil over medium heat. Add the sliced kielbasa and sauté until browned, about 5-6 minutes. Remove and set aside.
- In the same pot, add chopped onion and bell pepper. Cook for 3-4 minutes until softened. Stir in the minced garlic and paprika, cook for another minute.
- Add the broth, diced tomatoes (with juice), heavy cream, uncooked pasta, and the browned kielbasa back to the pot. Stir everything to combine.
- Bring to a boil, then reduce the heat to low. Cover and simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked through and the sauce thickens.
- Stir in the shredded mozzarella cheese until melted and creamy. Season with salt and pepper as needed.
