Description

These Peanut Butter Coconut Protein Balls are a simple, no-bake tropical snack packed with protein, fiber, and healthy fats. Perfect for meal prep and quick energy boosts.


Ingredients

Scale

1 cup peanut butter

1/3 cup honey or maple syrup

1 tablespoon coconut oil

1 cup rolled oats

1/2 cup shredded coconut

1/2 cup protein powder

1 tablespoon chia seeds

1 teaspoon vanilla extract

Pinch of sea salt

1/4 cup dark chocolate chips (optional)

1/4 cup dried fruit (optional)

1 tablespoon ground flaxseed (optional)


Instructions

1. In a large bowl, mix peanut butter, honey, and coconut oil until smooth.

2. Add oats, shredded coconut, protein powder, and chia seeds. Stir well.

3. Add vanilla extract and sea salt. Mix evenly.

4. Fold in chocolate chips or dried fruit if using.

5. Refrigerate mixture for 10–15 minutes.

6. Roll into 1-inch balls using your hands.

7. Chill again for 10–20 minutes before serving.

Notes

Store in an airtight container in the fridge for up to 1 week.

Freeze for up to 3 months.

Adjust sweetness by using maple syrup or honey.
