Slow Cooker Lemon Herb Chicken & Rice

Hi there, food lover! 👋 Ready to let your slow cooker work its magic while you enjoy the comforting aroma of herbs and citrus? This dish is a cozy classic—tender chicken infused with lemony freshness and savory herbs, all nestled in fluffy rice. A perfect family meal that’s simple, hearty, and wholesome!

Ingredients:

For the chicken:

  • 4 bone-in, skin-on chicken thighs (or skinless if preferred)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Juice of 1 lemon 🍋
  • Zest of 1 lemon
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped

For the rice:

  • 1 cup long-grain white rice (rinsed)
  • 2 cups low-sodium chicken broth
  • 1 tsp dried parsley
  • ½ tsp turmeric (for color and subtle flavor)
  • Optional: 1 cup chopped carrots or peas for added veggies

Directions:

  1. Season the chicken with salt, pepper, garlic powder, onion powder, thyme, and oregano. Rub in the olive oil, lemon juice, and zest. Let it marinate for at least 15 minutes if you have time.
  2. In a skillet over medium-high heat, sear the chicken thighs skin-side down until golden brown (about 3-4 minutes per side). This step is optional but adds rich flavor.
  3. Add rice, chicken broth, parsley, turmeric, and optional veggies to the bottom of the slow cooker. Stir gently to combine.
  4. Place the seared chicken on top of the rice mixture. Sprinkle in the chopped onions and minced garlic around the chicken.
  5. Cover and cook on LOW for 5–6 hours or until the chicken is tender and rice is perfectly cooked. Avoid opening the lid too often!
  6. Once done, fluff the rice, squeeze a little fresh lemon juice over the top, and garnish with extra parsley if you like 🌿.
