- 1 red bell pepper, finely diced
- 1 zucchini, finely diced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp hoisin sauce (pork-free version)
- 1 tsp sesame oil
- 1/2 tsp ground ginger
- Salt & pepper to taste
- For serving:
- 1 head butter lettuce (or romaine), leaves separated
- Fresh cilantro leaves (optional)
- Sesame seeds for garnish
- Lime wedges for squeezing 🍋

Directions:
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2 minutes until fragrant.
