  • ½ cup capers with a bit of juice
  • 4 cloves garlic, minced
  • 3 tbsp dried oregano
  • 2 bay leaves
  • ½ cup brown sugar (or coconut sugar for a lighter option)
  • Juice of 1 lemon
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup chicken broth (instead of white wine)
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Marinate the chicken: In a large bowl, mix olive oil, vinegar, garlic, oregano, bay leaves, salt, and pepper. Add chicken, prunes, olives, and capers. Toss well to coat. Cover and refrigerate at least 4 hours or overnight for best flavor.
  2. Preheat oven: Set to 350°F (175°C).
  3. Arrange in baking dish: Place chicken and all marinade ingredients into a large baking dish. Sprinkle brown sugar evenly over the top, then pour chicken broth around (not over) the chicken to keep the seasoning intact.
  4. Bake: Roast uncovered for 50–60 minutes, basting occasionally with the pan juices, until chicken is golden and cooked through (internal temp 165°F / 74°C).
  5. Serve: Transfer chicken to a platter and spoon prunes, olives, and pan juices over the top. Garnish with fresh parsley.
