Ingredients:
For the brownie base:
- ½ cup unsalted butter 🧈 (melted)
- ¾ cup sugar
- 2 large eggs
- ½ tsp vanilla extract
- ½ cup all-purpose flour
- ⅓ cup unsweetened cocoa powder
- ¼ tsp baking powder
- Pinch of salt
For the cheesecake layer:
- 250g (8 oz) cream cheese (softened)
- ¼ cup sugar
- 1 large egg
- ½ tsp vanilla extract
Toppings (choose your favorites):
- Chocolate chips 🍫
- Caramel drizzle 🍯
- Crushed nuts
- Mini marshmallows ☁️

Directions:
- Preheat oven to 175°C (350°F). Line a muffin tin with paper liners.
- Make the brownie batter: In a bowl, whisk together melted butter and sugar. Add eggs and vanilla; mix well. Stir in flour, cocoa powder, baking powder, and salt until combined.
- Make the cheesecake batter: In another bowl, beat cream cheese and sugar until smooth. Add egg and vanilla, mixing until creamy.
- Spoon about 1½ tbsp of brownie batter into each muffin cup. Top with 1 tbsp of cheesecake batter. Add a small spoonful of remaining brownie batter on top (optional for a swirl effect).
- Use a toothpick to swirl the brownie and cheesecake layers gently.
- Bake for 20–22 minutes, until the centers are set.
- Let cool completely, then top with your choice of chocolate chips, caramel drizzle, nuts, or marshmallows.
