- ½ cup mozzarella cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- ½ cup sour cream
- ½ cup chopped green onions
- 1 cup cooked chicken breast, shredded (optional, for a heartier casserole)
Topping:
- ½ cup shredded cheddar cheese
- ¼ cup green onions (for garnish)

Directions:
- Steam the cauliflower: Steam or boil florets for 5–6 minutes until just tender. Drain well and set aside.
- Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly add milk, whisking until thickened (about 4–5 minutes). Stir in cheddar, mozzarella, garlic powder, onion powder, salt, and pepper until smooth.
- Combine: In a large mixing bowl, toss cauliflower with the cheese sauce. Stir in sour cream, green onions, and shredded chicken (if using).
