  • 1 medium sweet potato, peeled and diced
  • 1 cup canned chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • Salt and pepper to taste

For the tacos:

  • 6 small corn or flour tortillas
  • 1 avocado, sliced
  • ½ cup shredded red cabbage (optional crunch!)
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Optional toppings:

  • Dairy-free yogurt or sour cream
  • Crumbled feta or shredded cheese (if not dairy-free)

Directions:
