Spicy Chickpea and Sweet Potato Tacos

Ingredients:

For the filling:

  • 1 medium sweet potato, peeled and diced
  • 1 cup canned chickpeas, drained and rinsed

  • ยฝ teaspoon cumin
  • ยผ teaspoon chili powder
  • Salt and pepper to taste

For the tacos:

  • 6 small corn or flour tortillas
  • 1 avocado, sliced
  • ยฝ cup shredded red cabbage (optional crunch!)
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Optional toppings:

Directions:
